Lemon-Herb Chicken

My diet plan is so far, so good. We've been having Chinese-style steam fish for the past couple of days, with vegetables. Broiled cabbage to be exact! Carbo content- 0. And today, I must say it's relatively safe for me to cook some meat ;)

Chicken is the highlight this evening. We know the bird is high in protein, low in fats but depends on how the way its cooked, of course. If I'm gonna bread it and deep fry in cheap oil, I should be dipping with the hippos.. and chances are, you won't spot me. I'm not sure if this dish is ideal for people on a strict diet but I'm very sure I want to try this recipe!

Lemon-Herb Chicken (2 persons)
*the frying pan I use is non-stick so I don't have to use so much oil
**total fat-free isn't so good either, remember Vit.A,D,E and K are fat-soluble

3 tbsp. of flour
Salt and pepper
4 skinless chicken breasts

Pre-marinate the chicken breasts with salt and pepper. Careful with the amount of salt! Coat the chicken with flour and brown them. When they're done, set them aside.

At this point, the chicken already taste yummy!

Sauce:
1 medium coarsely chopped onion
1 tbsp. butter
1 cup of chicken stock (chicken broth)
2 tbsp. lemon juice
Thyme

This part is a bit tricky. The recipe suggests chicken broth for ingredient but I sub-ed it with chicken stock. Gourmet gurus will tell you there's a large difference in taste and texture between them but for me, it was convenience over choosiness in the kitchen. I used 1/2 cube of Maggi Chicken Stock, boiled it earlier with 1 cup/mug of water.

Melt butter in saucepan, add in the chopped onions and cook until tender. Stir in the remaining flour (like a tablespoonful of it) and continue to stir for 1 minute. Pour in the chicken "broth", 2 tablespoons of lemon juice and thyme. Keep stirring and let it boil. Unite the chicken breasts with the sauce, let them simmer under medium-heat. Serve with any garnish as desired.

I only had chicken breasts with tomatoes while Turkish's plate had additional leftover rice from yesterday rice. This sauce itself might taste a little weird, but together with the chicken, it's really tasty! Tangy and tender white meat for dinner.

This recipe isn't Italian for a change LOL

Diet doesn't seem to be a killer :)
