Chicken Alfredo

Since we moved in Strelbischensky Pereulok, we've only ate out a couple of times. Turkish and I used to explore every other restaurants and cafes like 3-4times a week in town but without any reasons, we kinda put a halt to that gastronomous habit.

I cook nowadays.

Hahahahaa no joke. Russia moulded me into a pretty good cook. I enjoy practising my culinary skills in the kitchen. Sometimes when I feel like being experimental, I just look up the Internet for recipes and voila, dinner's a surprise tomorrow evening. So I thought it would be a good idea to share simple recipes here, which turned out a success for me the first time. When I cook, I don't measure so accurately. You gotta have some instincts of your own.

Chicken Alfredo (for 2 persons)
*Note that I state instructions which I personally use

2 pcs boneless Chicken Breast
A spoonful of Butter
Grated Parmesan cheese
Full cream milk/slivki
1 bag of Fettucine (whichever type available)

You may pre-marinate the chicken breasts with salt/pepper/spices and herbs. I like to use thyme very much and Worchestershire sauce which I brought from Malaysia. Good stuff to spice up the meat! Cut chicken breasts into strips and fry on medium heat until cooked through.

I like them a little charred ;)

Sauce:
Melt butter in saucepan; add cream and cheese. Cook over low heat, stirring constantly. Do not boil because the dairy expands in high temperature. You don't want to end up cleaning the spill on the stove/floor instead of enjoying the meal! If the sauce is too liquid, add more cheese (Ooohh.. yums!). Keep stirring.

Uhmm.. I prefer grating my own cheese

Butter is fattening but they do make food taste better

Slivki with 10% fat is enough (for me).. there's 20-40% too

Squirt roughly 300grams into the melted butter, then cheese

Cook fettucine in boiling water until soft. I used tagliatelle which is the same thing, only different names. Whenever I boil Italian pasta, I always add a few
Bay leaves. Very the fragrant especially when I buy cheapo noodles that smell too much flour. Goes well with steam rice too! Mix chicken strips and Alfredo sauce together. Drain noodles. Put sauce and chicken over noodles. You can't go wrong with this recipe!
